Nicky and Pieter are very dedicated and passionate about their cheeses. Pieter’s background is Dutch, which has helped him enormously in bringing all the knowledge involved in the gouda cheese making. Gouda is the cheese that they have specialised themselves in, and is available in many different flavours. The cheese making process has many variables. Every cheese making day, they adapt to the changing factors such as the weather, milk and humidity levels, so it is always a challenge to achieve the same consistent quality all the time. Every step in the process is done carefully and lovingly by hand in true Artisan fashion
